Grilled Chicken and Penne Mascarpone Tomato Sauce with Sun Dried Tomatoes and Spinach

This recipe I created based on the items in my kitchen. I had sun dried tomatoes, fresh spinach, and mascarpone cheese I wanted to use before it spoiled. This only took about 20 minutes to cook, and it was delicious and filling.

Cook Time: 25 Minutes

Servings: 2 people


  • 1 Chicken breast
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 1 Tbsp. Basil
  • 1 c. Tomato sauce
  • 1/4 c. Mascarpone cheese
  • 2 Tbsp. Garlic
  • 1/4 c. Sun dried tomatoes
  • 1/2 c. Spinach
  • 1 c. Penne
  • 1/8 c. olive oil


First, begin boiling a pot of water for the penne. In a deep-rimmed pan on medium heat, add olive oil and garlic.

As you wait for the water to boil and the garlic and oil to heat up, begin cleaning and cutting the chicken breast into bite sizes. Sprinkle the salt and pepper on the chicken evenly. Next, cut the sun dried tomatoes into bite sizes.

Once the garlic is golden, add the sun dried tomatoes and sauté until they soften and the oils combine. Next, add the chicken and cook.

The water should be boiling by now. Add the penne and cook one minute under the directions on the box (usually 8 instead of 9 minutes).

Once chicken is cooked halfway through, add the tomato sauce, mascarpone cheese, and basil to the pan. Mix to combine evenly.

Bring the sauce to a boil, then simmer on low heat for five minutes.

Add the spinach and mix until wilted.

Once the penne is done boiling, strain and add to the pan. Mix everything together.
