I love this recipe because it gives purpose to long-forgotten bananas and you don’t have to throw food away. This recipe is light and fluffy and a great snack for any time of day.
Prep Time: 10 Minutes
Cook Time: 30 Minutes
Cook To: 350° F
Servings: 8-12 people
- 4 bananas (as ripe as possible)
- 4 Tbsp. vegetable oil
- 1 egg
- 1/2 c. sugar
- 1 tsp. vanilla extract
- 1 1/2 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. cinnamon
Peel bananas and mash with a fork.
Add the oil, egg, sugar, and vanilla. Don’t over mix, though. Leave some clumps of banana, but make sure the sugar and egg are evenly combined.
Sift the flour, baking soda, baking powder, salt, and cinnamon into the bowl. Mix until all ingredients are combined.
Sprinkle in half-cut walnuts and mix to combine.
Spray a baking pan so the bites don’t stick. Pour batter into pan and sprinkle a bit more walnuts on top.
Bake in the oven for 30 minutes. At 30 minutes, stick a toothpick in the center of the pan. If it comes out clean, it’s ready. If it comes out with some batter, keep it in for another 5 minutes. Check again with the toothpick, and repeat until the toothpick come back clean.
Let cool for 5-10 minutes before cutting into bite sizes and serving.
Feel free to drizzle chocolate syrup and/or caramel.
